The holiday cheer still lingers and there's no reason not to bake some gingerbread men, women, pets, pentagrams or whatever shaped cookie cutters you've got. After the fun is done, the children are in bed and the resulting disaster in the kitchen is at least partially sorted out I take the last ball of dough out of the fridge and make a giant cookie for myself (or if you have someone special you'd rater give it to or share it with it's even better but...
... if not, just enjoy it alone in a cozy atmosphere
- 300gr flour (any kind will do but soft flour is better suited for this kind of dough)
- 100gr brown sugar
- 100gr butter
- 3 tsp honey
- 1 egg or 2 eggs if they're small
- 1tsp baking powder
- powdered ginger and cinnamon (as much as you want but usually 2-3 tsp of each is enough)
Combine dry ingredients, add the eggs and the melted but not hot butter with honey and you'll get a nice moist ball of greasy dough. Leave that in the fridge for 15min at least. Spread out on a floured surface and go nuts. The leftover dough from between the shapes should be put back in the fridge to cool off for another 15min before making another batch.
Bake for around 8 to 10 minutes in a preheated oven at 170°c.
I prefer decorating with a chocolate - coconut oil mix over frosting but hey, they're your cookies
, you can put bacon on top if you want, right?
It's really easy to make and hard to stop eating.
