If you can you should try to bake with coconut oil, from what I have read it doesn't oxidize at all, or atleast not when used for regular cooking, so it's very safe to use.
Also simple butter and any oil high in saturated fats is very good for cooking as it doesn't oxidize nearly as quickly. Saturated fats are very resistant to oxidation.
I stopped baking with any vegetable oils and only use high saturated fat oil such as a clump of (unsalted) butter or coconut oil to bake in and it's done wonders for me. I feel better and the food is also a lot tastier with a delicious sear on the meat if you bake with butter.
I always believed the crap about saturated fats being what makes you overweight and all, but ever since I cut out products with lot's of unsaturated and polyunsaturated fats and increased the amount of saturated fat I take in instead I've lost excess body fat extremely fast and it's also much easier to gain muscle, on top of that my skin is noticibly softer and healthier looking.
Fats are very important for our body as the cells need it for their membranes, but not all fats can be used well by our bodies.
