Iliad - Book 1 - Question

Why do they offer sacrifice in the Iliad to Apollo ? I understand that to quell Apollo's wrath they need to give the Trojan priest back his daughter and give offerings; however, why a "hecatomb"? The gods frown on sacrifice of flesh in their name; perhaps I'm missing symbolism.

If they were literal we would have many cases of people transforming into cows

it may be allegories but still love the book though odyseus herculese had an image to hecate when i first started paganism
