I am an early sleeper and early riser, and have my routine really established because it works well for me (22:00-22:30 to 7:00-7:30). However, I am afraid it might not really be fully night, and staying up for much longer would mean I'd have to catch up on sleep (I know this from experience). Staying until 00:00 will convert me into your average zombie, so I'd like to know if I can do it at around 23:00 maybe, a bit later than what I'm used to, to avoid disrupting my routine too much.

Also, there' no real benefit in staying up longer than you do. That's a normal sleep schedule to have, unlike many people nowadays.
When I could my early riser schedule was sleeping from 8:30-9:00pm to 4:30-5:00am which I found works through trial and error and works best for me. You cannot really go to bed after 10:30pm or wake up after 9am without harmful consequences, unless you're ill and your body's needs to adopt a different schedule temporarily to recover. Generally, it's ill-advised to go to bed any later than 11pm as that's not healthy for the human body and it disrupts your pineal gland's activity.
When you find a schedule where you wake naturally without an alarm, feeling energised, refreshed and ready to take on your day, that's when you know you've find the right schedule. Many people due to harmful habits they gained growing up from parents, social connections and media brainwashing call themselves "night owls" and go to bed much later than natural night owls. It doesn't really work and harmfully impacts health in the long run, regardless of people's bro science opinions.
What you're doing is right and there's no need to delay your sleep schedule. In winter, you'll have plenty of time in the morning and after twilight to talk to night Gods and Goddesses. In summer, depending on where you are, these Deities would rather you build a relationship with them during the day than take a blow to your health. Your health is of paramount importance to your life, your goals and to them. So, no Deity will ever ask you to do something against it. Quite the opposite.
In life, the main aims are moksha (spiritual advancement), dharma (vocation, self-development mental/physical/emotional/spiritual), kama (family, love, friendship, leisure), artha (financial prosperity and growth). Arogya (health) is a supporting goal that allows you to enjoy every other aspect of your life and that's why it's considered sacred. Sometimes we may need to temporarily sacrifice things in life but this is one of those times where there is no need for that.
