My grandfather knows but he won’t tell me. Should I just go with the obviously most common Cantonese or Mandarin surname or should I get him to spill the beans. I like both and don’t know an ethical way to choose-if there is one.I want to learn both cantonese and mandarin so I can can communicate.But I do want to learn both and have my children learn too. I'm not Chinese - but I feel your pain. I come from an Asian Christian family and our names became fully Europeanized, and I even told my folks I'm changing my name to the original Oriental name, though I won't specify what particular Oriental nation I come from.
In terms of Vietnam being sold out to Xians.....yep, Ngo Din Diemh, the supposed "anti-communist" leader was a Catholic who tried to turn Vietnam into a Catholic shithole, we can see how the catholicizing of Asia went (look at the Philippines for example).

This is quite a common issue I see among Vietnamese folks, many Vietnamese have mixed Chinese in them, and it's obvious through their physical looks, as "pure Vietnamese" are originally Brown Asiatic.
The entire Vietnamese Latin alphabet was from Catholic jesuits scum who wanted to disconnect Vietnam from the Sinosphere. The catholic friars in Vietnam were the precursos to the country becoming communist and during the Vietnam War, both sides were being played by the catholic church.
I would recommend going for the Mandarin surname, since Mandarin is considered the "unifying linguistic glue" of the Chinese people. The beauty of the Chinese alphabet is that a single symbol represents multiple spellings according to a language, so the symbol "王" can be translated as
Wang (Mandarin),
Wong (Cantonese),
Ông (Hokkien),
Vòng (Hakka) and etc, and they all mean the same thing, "prince/royalty/ruler" and etc.
Chinese and Vietnamese history is very intertwined, including their spiritual traditions, and in my opinion, the two peoples should continue to re-forge those lost ties. Same with Chinese and Korean history, the xians in Korea also tried to eliminate Chinese influence influence, though I'm glad to see that South Korea is actually starting to re-integrate the use of Hanja (Chinese-Korean alphabet).
