I think that just like dragons, they exist on a metaphysical plane of existence. The Minotaur was a test for King Minos to prove his worthy of being a king. He proved his satanic worthiness. The Minotaur might have been one of our gods with a bull mask on. I am not 100% certain but it's a theory.
